October 25 and October 26; 6pm – 9pm

This class will share the benefits of food preservation with a introduction to hot water bath canning. We will address in conversation different ways of preserving food; dehydration, freezing, pressure canning, fermenting. I will focus on supporting local food vendors (when possible), the power of shared bulk buying, equipment sharing, and exchanged learning. Each individual attending will participate in making fresh, homemade tomato sauce. From a discussion in sourcing the tomatoes, to prepping and cooking the sauce. With hands on experience in learning the technique of the hot water bath method for preserving. Everyone will take home a jar of their own sauce to enjoy. Share in conversation issues surrounding food security. Why is food security important? How does preserving food help make individuals food secure? Do you lack the space to store home preserving? Is buying local vegetables in season too expensive? Are you new to home preserving and want some guidance from others? Does tackling a canning project alone overwhelm you? What we, as a community can do to support others? With the increased cost of living, making our food dollars stretch and still put nutrientional meals on the table is becoming harder to do. Working together can benifit everyone.
